Actually, no scientific theory of how people perceive color or of how color vision works (in detail) has ever been proven or accepted by the scientific community. There have always been unproven assumptions, and there remain many assumptions in the new model.
There are some basic aspects of color vision which are reasonably well understood, but the models referred to in this article have never been accepted as representing physical or biological realities. Perception has always been assumed to involve psychology, which is not an exact physical science.
We must be careful about using the term "theory" when all we are referring to is a mathematical model. These models are used for convenience, not as exact representations of physical realities. As such, they are subject to change and to scientific fashion, and these models come and go.
There is nothing earth-shattering in this change in the use of mathematical modeling. This change does not make science unreliable in general.
However, any major paradigm shift among a large group of scientists is worthy of some attention. These things do happen, and perhaps not often enough.
Science is always about continuing to question what we know, not just what we do not know.

This is pretty impressive study;

Any predictions on which established scientific theory will fall next?
