It is not prudent to keep "playing chicken" with these requirements. Sooner or later, everyone doing these things is going to get burned.

After this past weeks presentation/demo on installing Windows 11 on hardware that falls short of Microsoft's requirements I was able to build the proper installation USB flash drive shown as shown in the demo. Next, I needed to prove that it actually works as intended.
 
It was also necessary to prove that Microsoft will provide Windows Updates to this newly upgraded/installed machine as it should. As expected, it worked flawlessly!
 
 
I used the free for non-commercial use VMware Player 16 to perform a complete install of Windows 11 in a new virtual machine that is fully functional, except for having a permanent license key. VMware Player is a program that lets users create complete installs of Windows and Linux that exist in a virtual machine environment. You can read more about it here:

VMware Player 16 is completely free for non-commercial use so feel free to give it a go.
 
 
By followings some instructions found on the Internet, I learned how to force VMware to boot directly from the USB drive, eliminating the need to boot from an ISO file. In short, I accomplished this by adding a SCSI controller to the virtual machine. The instructions weren't perfect, only they were close enough to let me muddle my through.
 
 

 

 
 
Proof of concept is complete! 
 
 
Windows 11 CAN indeed be installed/updated on computers that don't have T.P.M. or an encrypted drive!
